3 Little Piglets … New Twist for Baby Backs

Nothing
wrong with the same ole BBQ Baby Back Ribs but it’s fun to try something new. Thai Baby Back Riblets. Sorry NO Curry !!!
This
is the most requested, “Please bring your Riblets to our Party, Tailgate,
Birthday, etc.” I’ve seen friends finish eating and are still sucking on the
Rib Bone.
2-3+ Racks of Baby Back Ribs … $$$ Ouch !!! I look for a sale and then stock my Freezer. Have your butcher cut the slab of ribs length wise down the middle this yields about 20 to 25 Riblets.
3 Beer Thai Rub. If you want BBQ Ribs use 3 Beer BBQ Rub
Smoker, Grill or Oven with a roasting pan for Braising.
Directions
Remove Membrane on back of Ribs
Shake and Rub generously with 3 Beer Thai Rub
Cover and refrigerate for 2-3 hours. I usually refrigerate overnight.
Prepare Smoker, Grill or Roasting Pan for Braising.
Smoke, Grill, Braise for 3 ½ - 4 hours @ 225 F.
Grill with coals on one side and place Ribs away from direct heat.
Propane Grill light 1 burner and place Ribs away from direct heat.
Braise in Roasting Pan with bottom grate and 3 cups of liquid in
Bottom of pan. I use Beer with Westchestershire Sauce.
Lightly baste a few times with Thai One On Glaze (see recipe) during the last ½ hour.
Slice individual Ribs and serve with Thai One On Glaze on the side for dipping.
